I’m also very versatile into cooking techniques (dehydrator, spiralizer, food processor, pressure cooker, steamer, baking healthy with superfoods, etc…)
I met my husband Deepak who came straight from India to the state of Louisiana for his MBA. We became college sweethearts and followed each others to California for further studies in IT. Deepak found a job and moved to MS while I moved to London, UK to live the big life as an IT consultant for an international marketing company.
If any of you has been in a long term relationship, you know the pain… well, we would meet in Germany, France, London, or US every other week for 2 years until I got accidentally pregnant. There comes the shift: becoming a mother with no idea where to reside! We settled for the US where we risked everything to start our IT company (as we were not yet American citizens).
Our beginnings were rocky, as we had to adapt to each other cultures (French and Indian) and to our new beloved motherland: the US. Raising 3 children with no family member to give us relief or guidance was challenging but we now love our life in the sun state of Florida.
I have to accept to age gracefully, see my kids go to college and find my new center of well being with less of them, more of… you?
I feel grateful to the traumatic situations I surmounted and health issues I battled as it expanded my horizon of possibilities and develop so much empathy and patience for others.
I finally found peace in my relationship with food after struggling over a decade from chronic constipation. After experiencing and analyzing about 15 diets to find a solution, I later learned that my issues rooted from a neurological problem. Everything I do daily: working out, moving around, eating, drinking, I do it intuitively because I LISTEN to my body and pay attention to what elevates me and what put me down. To me, food is something that rejoices me, it gives me strength and stamina to go through my day, it helps me sleep well at night, and I take an honest pleasure cooking flavorful dishes and eating slowly… I definitely kept my French culture in regards to food as it is always the centerpiece of any gathering, even the most casual.
